Mexican Mulato chillies (often called chile negro) are dried, fully mature brown Poblano peppers (Capsicum annuum).

They look similar to the dried Ancho chilli, but are darker, sweeter, and feature a distinct flavor profile

It’s fairly mild and has an earthy flavor.

The Mulato tastes a little like licorice, with undertones of cherry and tobacco.
